Tatar wak-belyashi is a small round pie baked in the oven. It has a very attractive appearance, tender, slightly crispy dough and juicy meat filling. A tasty and satisfying dish is the hallmark of Tatarstan. Not a single holiday table in the country is complete without it. Unlike regular belyashi, wak-belyashi in the oven have advantages. Potatoes in the filling increase their nutritional properties. And the absence of fat on the surface allows you to take these products with you on the road or on a picnic. Let’s prepare the recipe for the wak-belyashi dough together!
Prepare the dough for wak-belyashi - cut 80 g of cold butter into pieces. Add it to the flour.
Using your hands, rub the flour and butter into crumbs.
Mix warm kefir with soda. Beat the resulting mixture with a fork or hand whisk until a large number of bubbles appear on its surface.
Combine kefir and flour. Knead soft dough. Place it in a plastic bag and put it in the refrigerator for half an hour.
Let's prepare the filling. Cut potatoes and onions into small cubes.
Add pieces of vegetables, black pepper and salt to the minced meat. Mix. Divide the filling into 12 servings.
We form products. Sprinkle the work surface with flour. Place well-chilled dough on it. Divide it into 12 equal parts. Roll each piece of dough into a smooth ball. Cover the pieces with cling film to prevent them from getting chapped.
Roll out the ball of dough into a flat cake with a diameter of 10 cm. Place a portion of the filling in the center of the circle.
We lift the edges of the cake and pinch it so that a large hole remains on top of the product. We form the rest of the wak-belyashi in the same way and transfer them to a baking sheet covered with parchment paper. Pour a tablespoon of clean water into the center of each product and place a piece of butter. Brush the wak-belyashi with beaten egg and place it in the oven preheated to 200˚C. Baking time – 45 minutes.
