Let's start preparing kefir dough for pies in a frying pan. Lightly heat the kefir in a saucepan or microwave. Make sure that it does not start to curl due to high temperature. Add yeast, sugar and 2 tablespoons of flour to warm kefir. Leave in a warm place for 15-20 minutes to form the basis for the future dough.
When a yeast “cap” appears on the base, add the egg, butter and salt. Stir and begin adding flour in portions.
Knead the dough by hand or with a food processor for about 3-5 minutes. It turns out soft and slightly sticky, but don't add more flour. Due to this consistency, the pies are fluffy. Gather the kefir yeast dough for pies into a ball and leave in a bowl under the film for 1 hour.
Remove the tough leaves from the cabbage. Shred it into thin strips.
Now chop the onion. You can chop it into small cubes or quarters.
Sauté the onion in sunflower oil for about 2 minutes. As soon as the onion aroma appears, add cabbage to the pan. Cook the filling over medium heat for about 5 minutes, then add spices and reduce heat. Continue to simmer the cabbage under the lid for 10-15 minutes.
Let the filling cool. At this time, chop the boiled eggs into cubes. Add them to the bowl with the cabbage and stir. Taste the filling for salt.
Divide the risen dough into 8 equal pieces, each of which is rolled into a ball. Cover them with cling film to protect the dough from air.
Stretch a piece of dough into a circle with your hands. Place 2 tablespoons of filling in the center. We press the edges tightly with our fingers, since the dough is slightly sticky, it sticks together perfectly. Place the pie seam side down and give it a characteristic shape.
Transfer all the pies to a baking sheet and cover them with film or a towel for 20 minutes. During this time, the pies will slightly increase in volume and become even more magnificent. Then brush their surface with beaten yolk and sprinkle with sesame seeds.
Bake the pies at 220 degrees for 25-30 minutes.
Here is such a simple and quick recipe for kefir dough for pies! To enjoy the flavor of the fluffy dough, serve them warm.
Enjoy your meal!
