Pancakes with salmon are an ideal appetizer for a holiday lunch or dinner. Thin pancakes combined with salted fish are an excellent and harmonious duet. You can salt the fish for the recipe at home yourself, or buy a ready-made product in the store. Buy lightly salted salmon – it’s great for filling. Fry custard pancakes – on kefir with the addition of boiling water, the baked goods will be tender, tasty and aromatic. The recipe for pancakes with salmon can be served immediately or chilled as a savory, salty snack.
Break the chicken eggs into a deep suitable bowl, add sugar and salt there. Mix these ingredients thoroughly using a whisk.
Pour in kefir - the fat content of this fermented milk product can be any.
Add wheat flour and stir the dough with a whisk so that there are no lumps.
Now add baking soda and immediately pour boiling water on top of it, stir the dough, adding the required amount of vegetable oil. With it, the pancakes will become more elastic and will not tear.
Let the dough sit for 15 minutes to release the gluten in the flour, then start frying the pancakes. Grease a frying pan with oil, heat it well, and turn the heat to medium. Pour the batter into a ladle and turn the pan to form a round pancake.
Fry the pancakes quickly - fry each side for 15-20 seconds, do not leave the stove so that nothing burns. Fry all the pancakes in this way, do not forget to periodically add oil to the surface of the pan.
Place strips of lightly salted salmon on the pancakes and sprinkle finely chopped dill next to them.
