Pancakes with cottage cheese and sour cream are a dish that all adults and children love. If you just fry pancakes, it will be delicious. But with curd filling it’s twice as tasty. Cottage cheese is great for filling, and sour cream will give the dessert a creamy, delicate taste. Use cottage cheese of any fat content. A homemade product is ideal – it is very healthy and tasty. After wrapping the prepared pancakes with cottage cheese, you can serve them immediately. Store the remaining portion in the refrigerator for a couple of days. Before serving, lightly fry the products in butter or reheat in the oven.
Prepare the dough - to do this, beat chicken eggs into a deep container, add sugar and a little salt there to adjust the taste.
Whisk the egg mixture using a regular whisk.
Pour in the milk and stir the liquid. Add a little more vegetable oil, it will make the dough elastic and the pancakes will not stick to the pan.
Add the sifted wheat flour little by little and break up all the lumps at once using a whisk.
The dough is ready, there are no lumps in it, now let it sit so that gluten forms in the flour.
Grease a suitable frying pan with vegetable oil, heat it well over medium heat, then pour in portions of the dough and fry the pancakes on both sides. When the dough is poured, point the pan in different directions so that the mass spreads in a circle. When the edges of the dough are browned, turn the pancake over.
Fry the products for a short time, after 20 seconds one side will be fried, the second can be fried for 12-15 seconds.
Let's prepare cottage cheese with sour cream - the filling for pancakes. Mix the cottage cheese with sugar; if you wish, you can enhance the aroma of the filling with vanilla sugar.
Add sour cream to the curd filling.
Mix all the filling ingredients, the sugar will quickly dissolve and you're done.
Place 1.5 tablespoons of cottage cheese with sour cream on the lighter side of slightly cooled fried pancakes.
Start tucking the edges in at the edges and around the sides so that the filling is all the way inside.
Roll the pancakes into a small tube.
In this way, roll up all the products using all the filling.
Serve the finished pancakes with cottage cheese and sour cream to the table immediately. You can always complement this dessert with sweet jam, honey or other syrups of your choice.
