Four Cheese Pizza is an iconic Italian dish, defining the standard of quality for the restaurant that serves it. Professionals bake it in a specially equipped stone oven on wood. An ordinary home oven can also provide the required temperature for preparing this delicious dish. The main thing is to use the cheeses recommended in the recipe. They go well together and produce a good result in the Four Cheese Pizza recipe. If it is impossible to purchase a certain type of cheese, we take a product that suits the taste and texture. We replace mozzarella with feta, feta cheese or suluguni, and dor blue with gorganzola. Instead of Parmesan we use pecorino or grano padano. And instead of gouda – cheddar or emmental.
Making pizza Four cheese dough at home. In a suitable sized container, combine dry yeast with salt and sugar.
Add warm water. Using a hand whisk, lightly mix the ingredients together.
Add a couple of tablespoons of flour. Mix. Add olive oil to the resulting mass. Leave the container with the dough for 15 minutes. During this time, the yeast will activate and rise to the surface.
After increasing the volume of yeast, add the rest of the flour. Mix the dough. It should be very soft and elastic. Cover it and leave for 50 minutes. If you don't want the dough to rise too much when baking, reduce the proofing time to 30 minutes.
Let's prepare the filling. Tear the mozzarella into pieces, cut the dor blue into cubes, and grate the parmesan and gouda on a vegetable grater.
Knead the risen dough. First roll it out into a round cake on the table. If necessary, use a small amount of flour. Then we transfer the dough onto a sheet of parchment and form a thin pizza base with a diameter of 26 cm.
First place pieces of mozzarella on the flatbread, then dor blue and gouda. The last layer is Parmesan. Preheat the oven to 200˚C. We drag the parchment with the pizza onto a baking sheet, which can be turned upside down for convenience. Bake the product for 15-17 minutes.
