A festive appetizer in the form of small tartlets with an attractive bright filling. This is a variant of the classic salad “Herring under a fur coat” in a more simplified version. In a spectacular portioned dish, curd cheese is used instead of the usual mayonnaise. It gives the vegetable puree a delicate creamy taste and a pleasant creamy texture. If the products are prepared in advance, herring under a fur coat in tartlets can be made immediately before serving. The process of filling tartlets takes several minutes. Baskets are used from sand, puff, sour cream or curd dough. If desired, you can bake potato molds, which are ideal for this interesting dish. First of all, we shift the pieces of herring to a plate to free them from excess oil. We cut the beets and carrots into random pieces. Transfer the chopped vegetables to a suitable container.
Add curd cheese to beets and carrots. Combine all ingredients with an immersion blender.
Season the resulting mass with salt and pepper, mix again.
Grind herring in two ways. We cut 12 thin pieces of fish for decoration, and crumble the rest of the fillet into a small cube.
We cut the onion into half rings 3 mm thick. Set aside 12 strips for decoration. Chop the rest of the onion very finely.
Pour boiling water over the onion cubes for a few seconds, put it on a sieve and add it to the herring. We mix everything well.
Quail eggs cut into four parts.
Advice! So that the yolks do not darken during the cooking process and retain their color, boil the eggs for four minutes in salted water from the moment of boiling. We form a snack. Our herring under a fur coat in tartlets - put herring with onions on the bottom.
We fill the baskets with a mixture of cottage cheese and vegetables. For this purpose, we use a pastry bag with a small curly nozzle. You can also deposit the filling with two teaspoons.
Put pieces of herring and small sprigs of dill on the curd-vegetable mixture. For neat placement of small products, use kitchen tweezers.
We supplement the appetizer with onion half rings and egg slices.
Ready appetizer herring under a fur coat is immediately served to the table.
