Today we will prepare delicate syrniki with a beautiful golden crust. They are ideal for a cheerful start to the day if complemented with sour cream and pieces of berries. And if you top the syrniki with condensed milk or jam, they will be a great addition to coffee or tea. To make the recipe successful, use cottage cheese that is not too dry, but not too wet. If you take it wet, the syrniki will turn out liquid and will spread when fried. And it will be difficult to form beautiful products from cottage cheese that is too dry. Let’s prepare a recipe for delicate syrniki together!
For the recipe for delicate syrniki made from cottage cheese, you need to take dry cottage cheese; the wet product will begin to spread when frying. Place the cottage cheese in a deep bowl. If it's too dry, add a little sour cream. Add a little more than a tablespoon of sugar. Don’t put a lot of it, as at high temperatures it will turn into syrup, and you don’t need excess moisture in syrniki.
Add two egg yolks; without whites the products will be more tender.
Next, we’ll add semolina to the cottage cheese; it will absorb all the excess moisture.
Then add cornstarch, a little salt and vanilla on the tip of a knife. Mix until you get a fairly thick curd dough. Leave it in the refrigerator for 15-30 minutes so that the semolina absorbs all the excess liquid.
Sprinkle the surface of the work mat with flour and place the dough on it. Roll it into a sausage with a diameter of approximately 7 centimeters.
Divide the sausage into 8 equal parts.
Dip each part in flour and shape using a metal ring, you can use a glass or glass. We take the ring and quickly make circular movements on the table, remove the ring, using a pastry spatula, carefully turn the syrnik over and form it again using the ring.
You should get eight beautiful syrniki.
Add sunflower oil, there should not be too much of it.
Quickly fry the products on both sides until golden brown and transfer to a baking sheet.
Bring them to readiness in an oven preheated to 180°C. Bake the syrniki for 5 minutes. Do not remove them immediately after the timer goes off; they may shrink in size. Leave them in the switched off oven for a while (10-15 minutes).
Our delicious and incredibly tender syrniki are ready! Transfer them to a serving plate, sprinkle with powdered sugar and decorate with berries. Serve fresh sour cream as a sauce.
