If you want to add bright colors to your diet, go with this delicious stewed pumpkin with garlic. This recipe is distinguished by its simplicity, original taste and aroma. The pumpkin turns out tender and piquant, garlic and spices perfectly complement the dish as a whole. It is worth noting that stewing pumpkin with garlic in a frying pan is incredibly healthy. An ideal solution for daily nutrition! Great for lunch or dinner! The sweetish pumpkin is complemented by fried onions, garlic and Provençal herbs. As a result, you will get a wonderful vegetable side dish for fried meat or fish. However, stewed pumpkin can become an independent dish if you are on a diet or fasting. Let’s cook stewed pumpkin with garlic together!
Rinse the pumpkin, peel it, remove all seeds and soft fibers. Cut the vegetable into large pieces or slices.
Cut the peeled onions into half rings or elongated feathers.
Heat the oil in a frying pan, add the onion and pumpkin. Saute the vegetables for 3-4 minutes, stirring occasionally. Add salt to taste.
Then add sliced garlic to the pumpkin and add aromatic Provençal herbs. Pepper if desired. Mix everything and fry for a couple more minutes to combine all the aromas of vegetables and spices.
Pour in a little water and simmer the pumpkin and garlic for another 15 minutes, turning the heat to low. When it is almost ready, so to speak “al dente”, you can turn off the heat. If you like softer vegetables, then simmer for another 5 minutes until fully cooked. Sprinkle the finished dish with sesame seeds. It will be more interesting if the sesame is not only white, but also black.
Serve stewed pumpkin with garlic warm, although it will be good cold. A healthy vegetable side dish looks bright and attractive.
