During vegetable season, pumpkin receives little attention. We want to fix this, because pumpkin always makes incredibly tasty and healthy dishes. For example, pumpkin pies will definitely appeal to those with a sweet tooth. The pulp of this vegetable is sweet even without sugar in the recipe. Let's prepare the pumpkin filling for pies - peel the vegetable, remove the core and cut the pulp into small cubes. We also finely chop the onion.
Add oil to a heated frying pan. First of all, lightly fry the onion for 2-3 minutes. Add the pumpkin and fry the vegetables over medium heat for about 10 minutes, stirring constantly. Then add 150 ml of water, tomato paste and salt. Continue to simmer the filling over low heat for another 10 minutes.
Roll out the completely thawed dough to a thickness of 2 mm. Divide the layer into 6 squares. To prevent the dough from sticking, sprinkle the surface and rolling pin with flour.
Brush the surface of the dough with beaten egg, and then spread 2 tablespoons of pumpkin filling. Sprinkle with finely grated cheese. Connect the edges diagonally to form a triangle. Seal the edges very carefully.
Our pumpkin pies are in the oven - transfer them to a baking sheet. Lubricate the surface of the products with yolk before putting them in the oven. You can use pumpkin seeds for decoration.
