For the dough you will need flour, butter, sugar, eggs and sour cream. For fluffiness, don’t forget to add baking powder. Muffins with red currants in the oven turn out sweet, soft and tender, with a pleasant berry sourness. Such pastries will delight both adults and children! The dessert will decorate your dinner table and even a holiday dinner. The berries stand out well against the background of the light dough.
Making the dough for the currant muffins recipe - beat in a chicken egg in a separate container and add all the sour cream. Sour cream is suitable for any fat content. It is acceptable to use natural Greek yogurt instead of sour cream.
Using a whisk, mix the eggs and sour cream well to make the mixture more homogeneous.
Melt the butter in a deep bowl and add all the sugar to it. Stir. This way the sugar will dissolve and the butter will cool while mixing.
Pour the sour cream part of the dough into the sugar-butter mixture, stir everything to obtain a homogeneous consistency.
Add some of the sifted wheat flour along with baking powder. Stir the dough, add more flour.
As a result, you will get a not very thick dough, reminiscent in structure of ordinary sour cream.

Fill the muffin tins halfway with batter and place in the preheated oven to bake. Bake the products for approximately 20-25 minutes at 180℃. The muffins will rise and rise due to the baking powder. Since the muffins themselves are small, they will bake quite quickly. Use any suitable muffin tin for baking. They can be either silicone or paper.
