Cook aromatic liver pancakes with carrots in a frying pan – it’s fast, tasty and unusual. For a delicate creamy taste, we’ll add cream and sour cream. And for a brighter taste – a little fresh dill. You can use any liver – chicken or beef. The hardest part of this recipe is cleaning the offal from the films, and you’ll cope with the rest of the steps very quickly. Serve this dish for lunch or dinner with a side dish. It will also complement well with sour cream sauce with herbs. Let's start preparing the recipe for liver pancakes with carrots by preparing the offal, in our case it's chicken liver. Rinse it and dry it with paper towels, remove all the films. If the liver is large, cut it into pieces and put it in a blender or food processor bowl.
Take one medium onion, wash it and peel it. Cut into half rings of medium thickness. Heat the frying pan, add 2 tablespoons of sunflower oil. Put the onion and fry it until golden brown for about 4 minutes over medium heat.
Next, wash, peel and grate one carrot on a medium grater. Add it to the onion to fry.
Cook everything together for about 7 more minutes over medium heat until soft.
Break 2 eggs into a blender bowl with the liver, add cream, sour cream and salt. If the bowl size does not allow you to add everything at once, break the ingredients into parts and make the pancake base in several steps.
Rinse and dry the dill, chop it and add next.
Add the slightly cooled carrots and onions to the other ingredients.
All that remains is to add a couple of spoons of wheat flour, baking powder, ground pepper and grind everything until smooth.
The result should be a liquid dough.
Heat 2 tablespoons of oil in a frying pan (you may need more) and begin to spoon out the dough. One pancake requires about 1.5 tablespoons of dough.
Fry the items for about 2 minutes on each side.
Delicious liver pancakes with carrots and onions are ready! Serve them with a fresh salad, mashed potatoes or any other side dish.
