All ingredients are available and inexpensive; during zucchini season, it’s a godsend! All you have to do is add any minced meat, a little onion, herbs, eggs and flour to quickly fry aromatic pancakes. You can prepare them in two ways. The first is to mix the minced meat with grated zucchini, and the second is to use the minced meat as a filling for vegetable pancakes. I prefer the first option, when everything is mixed. Place the minced meat in a bowl, add salt and pepper to taste. You can also add spices according to your preferences, which ones you like most. Any minced meat is suitable for this recipe. It is also acceptable to use minced chicken.
Rinse the zucchini, cut off the tails on both sides. Grate the vegetables on a coarse grater, squeeze out excess moisture and add to the minced meat. If possible, use young zucchini so you don't have to cut off the skin.
Beat the chicken egg into the zucchini and minced meat, stir. If necessary, you can add a little more ground black pepper.
