Despite the fact that you can prepare baked goods all year round, forgetting about pies during the cherry season is a crime. The sweet and sour cherry filling for pies has been a favorite of many since childhood. We want to remind you of this taste and invite you to please yourself and your loved ones with homemade cherry pies.
We tell you how to make cherry pies. Place a small saucepan on the fire and heat the milk in it, without bringing it to a boil. Place the butter in a saucepan and let it dissolve. Then add salt and mix the contents.
Sift the flour together with baking powder into a deep bowl and add sugar. For convenience, make a small depression in the center of the flour.
Pour the warm mixture of milk and butter into the formed hole. We proceed to kneading the dough, scooping up the flour with a spoon. Gradually begin to knead the dough with your hands, bringing it to homogeneity.
The dough turns out soft and elastic, it does not stick to your hands at all. We collect it into a ball, cover it with a plastic bag and leave it in the refrigerator for 1 hour.
While the dough is resting, let's prepare the filling for the pies. If the cherries were frozen, then you must first defrost them and allow the excess juice to drain through a colander. Cover the berries with a mixture of sugar, cinnamon and starch and mix the filling well.
Remove the pie dough from the cellophane and roll it into a thick sausage. Divide it into 12 pieces of equal weight.
Lightly sprinkle each piece with flour and roll it out into a layer about 4-5 mm thick. We recommend not rolling out all the dough at once so that it does not have time to dry out.
Place 1 tbsp on the center of the circle. l. cherries. We pinch the edges of the pie as tightly as possible, expelling the air from inside. To make the dough stick together easily, you can lightly moisten the edges.
Transfer the pies to a baking sheet lined with parchment or a Teflon mat. To make the pies golden brown, do not forget to brush them with beaten egg yolk. Place the baked goods in an oven preheated to 200 degrees for 20-25 minutes.
