Are you looking for milk pancakes with a beautiful openwork pattern with a lot of through holes? Add two secret ingredients to the dough – soda and boiling water. Milk diluted with boiling water can improve the taste and texture of the finished dish. A small amount of soda gives the dough porosity and makes it lacy during baking. Ready-made openwork pancakes made with milk and boiling water can be offered for a family breakfast. Or serve as a festive dish for Maslenitsa.
We tell you the recipe for openwork pancakes made with milk and boiling water. The milk and egg should be at room temperature by the time the pancakes are cooked. Sift the flour. To knead the pancake dough, use a deep container. Place the egg and salt in it. Using a hand or electric whisk, mix the ingredients together. Beat them until fluffy foam appears on the surface.
Add sugar. Mix everything again and beat.
Pour in milk.
Add flour in small portions. Bring the dough until smooth. Leave it on the table for one hour. During this time, the gluten of the flour will be released and all the lumps will disperse.
Bring the water to a boil. Fill it with soda. Pour the resulting liquid into the “rested” dough with constant stirring.
Mix vegetable oil into the pancake mixture and begin baking openwork pancakes.
To prepare pancakes, use a non-stick frying pan. Lubricate its bottom with a small amount of vegetable oil and heat it on the stove. Pour in half a ladle of dough. Distribute it over the entire surface. To obtain a beautiful lace on the surface of the product, the amount of dough in the pan should be minimal. As soon as the top side of the pancake is completely dry, carefully pry up its edge with a spatula and turn it over.
Fry the pancake on the other side for about one minute. Cover hot items to prevent them from cooling down.
Fold the finished thin openwork pancakes with boiling water and milk into triangles and serve warm.
Enjoy your meal!
