The classic American Waldorf salad has a very long history of appearance. Like the hotel after which it was named and where it was first presented. The Waldorf-Astoria Hotel was built in the late 19th century. At the same time, head waiter Oscar Chirki came up with a signature treat for his clients.
The salad has changed a lot over the years. But the main ingredients – celery, apple and walnuts remained unchanged in its components. Today, salad is considered one of the lightest and most dietary. He is loved by everyone who follows the figure and the benefits of the products used. Try it too!
Toast the walnuts in a dry hot pan.
Grind or cut them so that tangible pieces remain. It is best to do this with a wooden pusher or a rolling pin through a paper towel.
Salad dressing can be prepared in several variations, depending on how light you want your salad to be. If you are not afraid of the composition and calorie content of mayonnaise, use it, but if you prefer a low-calorie version of Waldorf salad, take natural yogurt for dressing. A 50 to 50 proportion of mayonnaise and yogurt in dressing is also allowed. In any case, lemon juice, freshly ground pepper and salt to taste must be added to mayonnaise or yogurt.
When the nuts and salad dressing are ready, you can start cutting the main ingredients - celery and apples. In the original version of the salad recipe, petiole celery was used, but in the process of developing culinary art, many chefs began to replace it with root celery. Grate the celery root or cut the celery stalks into cubes.
Lastly, chop the apple. If it has a hard peel, be sure to remove it or immediately cut the apple into slices or straws. Immediately sprinkle the apple well with lemon juice so that the salad does not lose its aesthetics due to darkening.
Now you can take the dish and lay out the ingredients of the salad: put apple slices and celery on a pillow of lettuce leaves.
Arrange the washed grape berries.
Sprinkle the salad with walnuts on top and garnish with herbs. The salad is tossed with the dressing just before serving, or the dressing is served at the same time as the salad. Waldorf salad is ready!
