Vegetables can be used to prepare various dishes for lunch or dinner. You don’t even need meat here. In different seasons, you can use everything that is sold in markets or stores. Today we will prepare a hearty and tasty vegetable stew with zucchini and potatoes. You will also need red bell peppers, onions and carrots. A rich set will help you make the dish bright and appetizing. Many people will like the Lenten version of this dish. It is prepared quickly and simply, any housewife can handle it. Spices will help you diversify the recipe – add what you like most. Let’s make a vegetable stew with zucchini and potatoes recipe together!
Peel all root vegetables - potatoes, onions and carrots. Cut the potatoes and carrots into medium slices or half circles, and the onion into feathers or half rings.
Heat some vegetable oil in a saucepan and add the prepared ingredients. Fry potatoes with onions and carrots for 3-4 minutes, stirring occasionally.
Remove seeds from sweet peppers and cut into strips. Cut the tails off all sides of the zucchini and cut into semicircles.
Add them to the pan.
Pour in a little more oil, mix everything, salt and pepper them. Fry the ingredients for a couple more minutes. Now all the flavors have combined, and the vegetables have released their juice. If you wish, you can add your favorite spices, such as paprika or herbs de Provence.
Add a couple of bay leaves to the pan, pour in tomato paste diluted with water. Let everything boil.
Simmer the stew over low heat for 20-25 minutes, covering the pan with a lid. Vegetables should become softer and potatoes should be completely cooked.
