Posikunchiki are Ural pies filled with minced meat. The interesting name is explained by the abundance of meat juice that flows out when biting the pie. Today we will try to get acquainted with an unusual recipe for these small fried Ural posikunchiki.
We start preparing the recipe for posikunchiki with the dough - in a large bowl, beat the egg with sour cream with a whisk. Pour in cold water, add salt and stir.
We begin to introduce the sifted flour. Add it in portions, kneading the dough well. Do not add all the flour at once as the dough may become very dense.
Sprinkle the work area with flour and knead the dough on it with your hands. It should be elastic and pliable.
Transfer the posikunchik dough back to the bowl, cover with film and leave for 30 minutes.
While it is resting, let's move on to preparing the filling. You can use any meat for this recipe, but the dish tastes better with minced pork and beef. Mix the meat with finely chopped onion.
Add salt, pepper and water. Mix the filling until smooth.
Transfer the dough again to a floured surface. Roll it into a thin sausage and divide it into small pieces. Roll out the dough into a thin layer.
Place 1 tablespoon of minced meat on the center. We pinch the edges tightly so that the meat juice does not flow out of the pie.
Heat vegetable oil in a frying pan. Fry the posikunchiki alternately for 5 minutes on each side until appetizingly golden brown. Can be deep-fried until golden brown. Leave the fried pies for a few minutes on a plate with a paper towel to absorb excess oil.
