All pancakes cooked with milk are good in their own way and have certain taste qualities. We invite you to master another recipe for this quick and simple homemade pastry. Its distinctive features are the openwork surface of the products and a large number of through holes. Hot milk and soda, quenched with vinegar at the very end of kneading the dough, help to get beautiful lace. Before baking the pancake mixture, let it sit for a while. Within two to three minutes, the baking soda reacts with the vinegar. And the dough, which has increased in volume, returns to its original state. Let’s cook openwork pancakes with hot milk together!
To knead the dough for thin pancakes with hot milk, use a deep container. Beat an egg into it and add sugar. Using a whisk, combine the products together. The egg white should become more fluid and the sugar should completely dissolve.
Pour half the amount of warm milk into the resulting mixture. Mix.
Mix the sifted flour with soda and add in small portions to the container.
Heat the second part of the milk until hot, but do not boil. Pour milk into the dough in a thin stream. Mix everything quickly. Leave the container with the dough on the table for 10 minutes.
Then add vinegar and vegetable oil. Whisk the contents of the container intensively. As a result of active mixing, the pancake mixture will increase in volume. Let it sit for a few minutes until it sinks, and then start baking pancakes with holes in hot milk.
We use a well-heated frying pan with a non-stick coating. Before each portion of dough, grease it with a small amount of vegetable oil. A silicone brush is well suited for these purposes. First pour the dough into the center of the pan. The optimal amount of pancake mixture is half a ladle.
During the cooking process, we control the heating of the stove. When baking the pancake on the other side, reduce the heat slightly. Place the finished products in a stack and cover.
