There are many recipes for fried pies with potatoes, but we will share the most successful ones. This dough is easy to prepare, and the fried potato pies turn out fluffy with a tempting crust. Let's prepare the basis for a fluffy dough of fried yeast pies with potatoes. Add instant yeast, sugar and a spoonful of flour from the total amount to warm water. Stir until the sugar dissolves and the flour is distributed without lumps. Leave the mixture for 15 minutes.
Pour the base into a large container, add vegetable oil to it. Start adding flour and salt.
We get elastic dough. Knead it for 3 minutes and leave it in a bowl with oiled sides for 1-2 hours. Cover the container with a towel or film.
We are preparing the filling for pies, fried in a frying pan, with yeast and potatoes. Boil potatoes in salted water. Turn it into puree, add salt and pepper. Add the fried onion and stir. If the puree turns out to be too dense, you can add a little butter or warm milk to it.
After an hour, the dough increases in size. It will be sticky, but don't add more flour. This is the dough that produces the most fluffy pies.
Grease your hands with oil and divide the dough into 7-8 balls. Using your hands, knead each ball into a flat cake and add 1 spoon of filling.

Heat about 50 ml of oil in a frying pan. Fry the pies over medium heat on each side for 3-5 minutes. Transfer the finished pies to a plate with a paper towel. After 10 minutes, as the towels absorb excess oil, you can throw them away.
