Eggplant Kucherikas in Greek – stuffed “boats” of eggplant. They are often found on festive tables in the form of a hot appetizer. An interesting combination of cottage cheese, cheese, herbs and spicy garlic will not leave anyone indifferent. We wash the vegetable under running water, especially carefully in the area of \u200b\u200bthe stalk, since we will not remove it during the cooking process. We cut the eggplant with a knife so that we get two identical halves of the “boat”. Dip them in a pot of salted water and boil for 10-15 minutes.
Carefully remove the halves of the vegetable and let them cool. Scoop out the flesh of the eggplant with a spoon, leaving a thin layer of skin. Be careful not to damage the skin as it is very fragile.
Put cottage cheese and grated cheese in a bowl. We also add an egg here, which will help bind the ingredients of the filling.
Finely chop the eggplant pulp with a knife and send to the main filling. Add chopped garlic and finely chopped herbs. Usually green onions, parsley, dill or basil are used. Salt and season with your favorite spices to taste. Mix all the filling thoroughly.
We lay the boats on parchment and fill with cottage cheese and cheese filling. We send Kucherikas to a hot oven at 180˚C for 20 minutes. If the eggplants are browning too much, cover them with foil.
