100 gr Corn grits
350 ml Water
150 ml Milk cow's
70 gr Cheese curd
30 gr Cheese Grated on a fine grater
50 ml Oil sunflower
2 heads Garlic
40 gr Onion
1 tsp. Italian herbs
5 gr Salt
1 pinch Pepper black ground
500 gr Champignons
The traditional combination of corn grits and mushrooms is very popular in Northern Italy. A simple but very appetizing polenta with mushrooms is prepared not only for a family lunch or dinner. But they are also served in expensive restaurants. The creamy structure of polenta is given by hard and curd cheese. Champignons are the perfect accompaniment. They are fried with spices and aromatic herbs. Follow our recommendations and you will get the perfect corn porridge with the right texture and delicate creamy taste. Let’s start cooking polenta with mushrooms and cheese at home!
We cook porridge. Pour milk and water into a small saucepan. Mix the two liquids together. Bring the contents of the saucepan to a boil. Add salt to taste. Pour the corn grits into the boiling liquid with constant stirring in a thin stream. Slightly reduce the heating of the stove. Cook the porridge for two minutes over medium heat with continuous stirring. Then reduce the heating of the stove to a minimum. Boil polenta for 40 minutes. We do not cover the pot with a lid. During the cooking process, stir the contents of the pan from time to time.
While the porridge is cooking, prepare the second part of the dish. We chop the onion.
Mushrooms cut into not too large pieces.
Heat 20 ml of vegetable oil in a frying pan. Fry the onion until a nice golden color.
Our polenta with porcini mushrooms, let's cook them. Heat the remaining oil in another pan. Saute the mushrooms over high heat. We are waiting for all the liquid to evaporate. Then reduce the heat, add the fried onions and mix everything.
Add seasonings and chopped garlic. Once again, mix everything, cover and steam over low heat for two minutes.
In the finished porridge, add curd cheese and half the norm of hard cheese. We mix.
A delicious mushroom polenta recipe is ready! Put the porridge on a serving plate. Make a small indentation in the center. Put in the fried mushrooms. Sprinkle the dish with the second part of grated cheese and decorate with herbs.
