Rinse the cabbage under running water or remove a couple of top leaves, then chop it finely. The young vegetable is juicy and tender, ideal for a healthy snack, but it is not entirely suitable for stewing and frying.
Rinse fresh cucumbers and remove the stems from both ends. Taste the cucumbers to ensure the skin is not bitter. Then cut the vegetables into medium strips or strips.
