Ketchup can be not only bought in the store, but also prepared at home. The products needed for this are the simplest. Tomato paste, onion, garlic, seasonings and spices. If you like spicy homemade ketchup with tomato paste, you can add a little hot pepper during the preparation process. Or ground chili pepper. To give it a smooth texture, puree it with a blender as soon as it is ready and cools down a little. Natural ketchup at home from tomato paste is stored in the cold in an airtight container for 5-7 days.
To make homemade ketchup with tomato paste recipe, prepare the vegetables. Peel the onion and cut it into medium cubes. Grate the garlic on a grater with small holes or crush it with a garlic press.
Place the chopped onion and garlic in a blender bowl and grind them until they have a puree consistency. It is important that there are no large pieces of onion left.
Pour cold water into a ladle or small saucepan with a thick bottom, add garlic and onion puree and tomato paste.
Place on the stove and heat over medium heat, stirring until the mixture is smooth. Then add salt, granulated sugar, paprika, as well as bay leaf, cloves and allspice peas.
Reduce heat and cook the tomato mixture for 30-40 minutes until all excess liquid evaporates. Stir occasionally with a spatula. The mixture should thicken and decrease in volume slightly. Taste the mixture, add salt or spices if necessary. Remove the saucepan from heat, remove the bay leaf, cloves and peppercorns with a spoon. If desired, you can puree the mixture with an immersion blender, then the homemade ketchup will be smoother, similar to store-bought. But you don’t have to do this.
