Interestingly, the Caesar salad classic has nothing to do with the commander and politician of the Roman Empire. It was invented only at the beginning of the 20th century by an Italian culinary specialist and the owner of several restaurants in America. His name is Caesar Cardini, and he once fed his visitors a dish of food left in the kitchen. This is how the Caesar salad classic appeared, which after a few years gained immense popularity. The recipe was called the best that was invented in the USA in the last fifty years. Today we will present you a slightly different recipe that is different from the original. But it’s no less delicious!
Before cooking, you need to do a couple of preparatory steps. First, marinate the chicken breast in a mixture of salt, freshly ground black pepper, and herbs (such as basil and oregano). Leave to marinate for 15-20 minutes, and even better, if possible, for 2-3 hours. Secondly, pour garlic slices with olive oil and give it time (about 15 minutes) to absorb all the garlic flavors and its spicy taste.
In this oil, it will be necessary to fry cubes from a white loaf. Remove the garlic slices from the oil first, as they will give an unpleasant burnt aftertaste when fried. Remove the fried croutons and put them on paper towels to absorb excess oil.
In the meantime, the chicken fillet was marinated, which means it's time to fry it in a heated frying pan until appetizing browning with a crust. Then transfer to a refractory form and bring the chicken meat to full readiness in a preheated oven for about 10-15 minutes.
Cut the cooled fillet into medium cubes.
Preparation of dressing: the original salad dressing is prepared with the obligatory addition of Worcestershire (Worcestershire) sauce. It has a sweet and sour and slightly spicy taste, due to the presence of a fishy component. But if you have not found Worcestershire sauce on sale, you can try to prepare a more affordable dressing for this famous salad in our latitudes. It will require two or three boiled yolks, so you need to boil hard-boiled eggs in advance, cool and separate the whites and yolks.
Grind the yolks with mustard.
Add lemon juice, apple cider vinegar, one clove of garlic (squeezed through a press), olive oil, salt and pepper. All ingredients must be very thoroughly mixed until a homogeneous puree mass. Salad dressing is ready, proceed to the rest of the salad ingredients.
Washed and dried lettuce leaves (ideally use romaine lettuce) tear with your hands into medium pieces and put on a dish.
Arrange the chicken pieces and garlic croutons on top.
Pour dressing over everything and sprinkle with shavings of grated parmesan. Caesar salad is ready!
