Bilberry pie is the perfect accompaniment to a cup of hot tea or a glass of fresh cold milk! Very simple, but sweet dough is in harmony with bilberry sourness. The berries are baked inside the dough and form a kind of “pockets” with juicy juice. In summer, you can add fresh bilberries to the pie, which you can easily find in any supermarket or market. And in winter – frozen. Both options provide delicious results! Here’s how to make a simple bilberry pie at home.
Preheat the oven in advance so that the dough bakes well in the future, turning it on 180 degrees. Whisk eggs together with sugar using a whisk or fork in any bowl convenient for kneading dough.
We begin to gradually add flour and baking powder to the sweet egg mixture. It is important that the flour along with the baking powder be sifted, you can do this in advance, but it is better to sift immediately when adding. So the dough will be more airy, without lumps. In kneading delicate dough, a mixer or blender at low speeds is ideal. But if there is no such tool, it’s not scary, you can use an ordinary whisk or forks folded with the outer side to each other.
Add all the bilberries to the dough and gently mix with a pastry spatula, the main thing is not to crush the berries! If you use frozen ones, add them straight from the freezer, sprinkle with a little flour, do not wait until they thaw.
Take a round baking dish, you can use any that you have. Lubricate it with a thin layer of soft butter, a silicone confectionery brush is useful for this.
Slowly, in an even layer, sprinkle the butter with breadcrumbs. Thanks to this layer, the walls of the cake will not stick to the form itself and will look neater.
Pour the dough into a greased form, distribute in such a way that it lies evenly over the entire area. Recipe for bilberry pie in the oven - set and bake at a temperature of 180 degrees for 1 hour.
The readiness of the dough can be checked with a toothpick - pierce the crust of the pie with it, if the toothpick has become raw, then you need to bake more.
