The Easter holiday is not complete without Easter cakes. This is a long-standing tradition, and every housewife makes them according to her own proven recipe! Easter cakes can be prepared with milk, sour cream, cream, with or without yeast. Today we offer you a recipe – a tender and flavorful Easter cake with kefir. This pastry will decorate your Easter table well. You definitely won’t buy this in a store. And making a delicious kefir cake with yeast at home is very easy when you have a great recipe!
Add 1 chicken egg and 2 egg yolks to a separate bowl, add regular and vanilla sugar. The remaining 2 egg whites will be used to make the glaze. Using a whisk, thoroughly beat the egg mixture with sugar.
Add ground turmeric to the eggs - it will make the baked goods a sunny color, brighter and more appetizing.
Melt the butter and cool it, pour it into the beaten eggs and stir this part of the dough thoroughly.
Heat the kefir slightly until it becomes slightly warm, crumble the raw yeast into it and stir everything thoroughly until smooth.
Pour the egg mixture with butter into the kefir with yeast, stir everything with a spoon.
Sift all the wheat flour into a spacious bowl, add a little salt and mix.
Pour the yeast into the flour and start kneading the dough.
Roll it into a soft ball - leave the dough in this form to rise, covering with a dry towel. Let it sit undisturbed for 40-50 minutes.
During this time, the yeast dough on kefir will grow 2-3 times. The base for the Easter cakes is ready.
Lightly grease your hands with vegetable oil and knead the dough, stir in the washed and dried raisins.
Divide into equal parts and place in prepared cake pans.
Leave the dough in the pans to proof for 20-30 minutes. Cover the molds with a towel to prevent the contents from drying out. During this time, the Easter cakes made with kefir will rise.
Bake them in a preheated oven at 170-180°C, after 35-40 minutes check their readiness - pierce them with a wooden skewer, it should be dry. Remove the finished cakes from the oven and let them cool quietly.
While the cake is cooling, prepare the glaze. Whisk 2 chilled egg whites with sugar and a pinch of salt. Beat the glaze with a mixer for 3-4 minutes until thick.
Brush cooled Easter cakes with egg white glaze and decorate with brightly colored confectionery sprinkles. Our kefir cake recipe is ready! Serve beautiful pastries to the festive table.
It turns out incredibly soft and tender. The dough does not crumble, its structure is finely porous and airy.
