There is no difference between caviar from fresh and frozen zucchini. Our recipe is even healthier. Frozen vegetables quickly become soft when stewed. You can skip the vinegar, as we will not be storing this snack for long. Thick zucchini caviar from frozen zucchini is a good filling for morning sandwiches. In the evening, zucchini caviar can be served with baked chicken fillet. In the summer, put containers with vegetables in the freezer. And in the cold season, they will help make the menu more interesting.
For caviar, we use peeled zucchini, frozen in the form of cubes. Pour the zucchini into the pan, without waiting until they thaw.
We cut the carrots into cubes, the onion into large half-rings.
You can cook dietary stewed caviar without first frying vegetables. But still, light frying significantly improves the taste of the dish. Pour carrots and onions with olive oil, sauté until soft and transparent onion rings.
Put carrots and onions in a saucepan with zucchini, pour out all the oil from the pan.
Throw in halves of frozen sweet pepper. In order not to distort the golden color of caviar, we take yellow or red pepper.
At this stage, put an equal amount of sugar and salt, picking up a teaspoon flush with the edges.
Tomato paste should be thick and quite spicy.
Cut the garlic cloves into rings, pour into a bowl. Mix the vegetables, cover the pan with a lid and put on a slow fire.
Vegetables will be stewed for 20 minutes, during which time they will need to be mixed 3-4 times.
In the process of stewing, vegetable juice is released, and the cutting itself becomes very soft.
We remove the pan from the stove, pierce the hot zucchini caviar with a submersible blender. We try caviar, if necessary, add sugar or salt. We return the pan to the stove and boil for another 2-3 minutes to increase the density.
Zucchini caviar from frozen zucchini is ready, it can be stored in the refrigerator for 7-10 days.
