A warm salad with bulgur and vegetables will serve as both a side dish and an appetizer. For lunch or dinner, you can’t imagine anything better; the dish is very filling, tasty and nutritious. Ideal for a vegetarian menu who does not eat meat. This salad can definitely diversify your daily menu. All you need is bulgur and fresh vegetables. Take tomatoes, some carrots and sweet red pepper – it will make the snack more colorful and appetizing. Add some onion if desired. You can experiment with vegetables and add something new. For dressing, use olive oil and lemon juice, which will give the dish a piquant touch. Bulgur goes well with vegetables, and you and your family will love the salad.
Cook the bulgur as directed on the package - usually from 15 to 25 minutes. I cooked the cereal for 25 minutes. Don't forget to salt it. When the cereal is ready, drain all the liquid. Place the finished bulgur in a deep salad bowl.
Prepare the vegetables, rinse them, peel them. Cut the carrots and sweet red pepper into large strips.
Cut the tomatoes into slices. Vegetables of any size are suitable for this recipe, including cherry tomatoes.
Lightly grease the frying pan with olive oil and heat it up, add the carrots there and fry them for 2-3 minutes over low heat. Then add sweet peppers and tomatoes, add salt and pepper to taste, and stir. Fry all the vegetables together for another 1 minute.
Add fried vegetables to the warm bulgur.
Then add finely chopped parsley to the salad, pour in the remaining olive oil and lemon juice.
Mix the salad, take a sample to ensure there is enough spice, and the dish is ready.
Serve the warm salad with bulgur and vegetables immediately. The cereal has a pleasant and subtle nutty aroma; it goes well with vegetables. The appetizer turns out bright and impressive; it can decorate a family lunch or a romantic holiday dinner.
