Cooking delicious dietary vegetables baked in foil for dinner is not a problem. After quickly chopping the vegetables, put them in the oven – it will cook everything perfectly. A universal recipe will help every housewife, and if you are fasting, then feel free to take note of it. Thanks to foil, vegetables will not only cook faster. But they will also remain juicy, tasty and slightly crispy. For this recipe for roasted vegetables in foil, use whatever you have in your refrigerator. Zucchini goes well with eggplant and tomatoes. Also add bell pepper, some garlic and sweet carrots for flavor and color. Onions will add juiciness to the dish. In addition to the vegetable mix, don’t be afraid to add a variety of spices that you like. Dried basil, marjoram or herbs de Provence will come in handy here.
Rinse all vegetables and prepare for the recipe. Cut off the tails and peel if necessary. Cut eggplants, zucchini and carrots into half rings. They should be approximately equal in thickness - this way everything will cook in the oven at the same time.
Cut the tomatoes into medium slices, and the onions and sweet bell peppers into strips. Any color of bell pepper is suitable for this recipe. If you like spicy dishes, then feel free to add chili pepper.
