Turkish white chicken soup (Tavuk suyu corbas) is prepared according to the national recipe. From the first spoon, it conquers with its creamy texture and delicate milky taste. Particular attention should be paid to a special spicy dressing. It gives a hearty dish a special appetizing look, delicate creamy taste and aroma. It adds savory notes of dried mint. We wash the chicken breast, place it in a small saucepan and fill it with clean cold water. Bring the liquid to a boil. We reduce the heating of the stove, remove the foam, add salt. Cook the broth over low heat for 20 minutes. So that the broth does not boil too much and retains its transparency, do not cover the pan with a lid.
Remove the cooked chicken breast from the broth. Let it cool a little, and disassemble it with a fork or hands into thin fibers. If desired, the meat can be cut into small pieces.
Bring the broth to a boil. Pour the vermicelli, mix well and cook over low heat until tender. In a small bowl, using a hand whisk, combine the yogurt, flour and egg yolk.
Gradually add 100 ml of hot broth to the resulting mass. We mix everything well.
Pour the homogeneous liquid in a thin stream into the vermicelli broth, while thoroughly mixing the contents of the pan. Add pieces of meat. Season white Turkish chicken soup with salt and black pepper, bring to a boil and switch off.
We're getting ready to ship. Melt the butter in a small saucepan. Add paprika, mint or Provence herbs. Simmer the dressing for one minute.
