Okroshka with red radish is an ideal cold spring soup! It can be prepared with kefir, sour cream or water! Choose what you like best. Classic okroshka with red radish will refresh and satisfy on a hot day; this dish is prepared from the most affordable vegetables. You will need potatoes, eggs, cucumbers and radish. Dairy sausages or regular boiled sausage are suitable as a meat component. You can also use boiled chicken breast for a more satisfying option. Cold soup has an unusual taste and delicate aroma. Boil the potatoes and chicken eggs in advance. Rinse the potatoes and boil them in their skins until fully cooked – about 20 minutes. Then let them cool and peel them. Boil the eggs hard – this will take 8-9 minutes. Cut the cooled eggs and all the cooked potatoes into small cubes for okroshka.
Rinse all the vegetables – radishes and cucumbers – cut off all the stems. Cut the vegetables into small cubes.
