In hot weather, you want something cool, not too high-calorie and refreshing. In this case, okroshka on cold kvass will be an excellent solution for a family dinner. Kvass can be purchased or prepared in advance from rye bread or a special dry mix. Optionally, in addition to kvass, okroshka can be seasoned with kefir. Or mineral sparkling water, whey.
Boiled sausage can be replaced with boiled beef, chicken fillet or diced Adyghe cheese.
We clean the boiled sausage from the packaging. Any high-quality sausage will do, for example Doctor's or Olivier from a trusted manufacturer. Cut it into circles 1 centimeter thick. Then we crush each circle into a cube.
Let's wash the radish. Cut off the tails and cut the juicy vegetables into a cube of the same size as the boiled sausage.
Wash fresh cucumbers. It is better to choose young vegetables with thin skins and small seeds. Trim the tails and cut the vegetables into cubes.
Hard boil four eggs. Cool the ingredients, carefully clean the shell. Grind the boiled eggs into a cube, without separating the yolks from the proteins.
Wash potato tubers. If desired, you can boil vegetables in their skins (if the potatoes are young) or pre-peel the tubers. When the vegetables are boiled and become soft, drain the hot water from them and cool completely. Then we cut the cooled tubers into a cube, not forgetting to peel them if you boiled potatoes in their skins.
Now it's green's turn. Wash and dry it with paper towels. We chop the green onion feathers into rings, finely chop the dill and fragrant parsley.
All the ingredients are ready, you can collect okroshka with sausage. It is better to do this in portioned bowls so that everyone can independently regulate the consistency of the cold soup. Pour 1-2 tablespoons of all ingredients into a deep plate.
Mix vegetables, sausage, boiled eggs and greens with kvass so that the soup becomes homogeneous. To taste, you can add a little lemon juice or a spoonful of fat sour cream. We will serve okroshka immediately. To keep the soup cold for a long time, you can put each broth on a plate with ice cubes.
