To prevent the dish from being dry, it is important to simmer it in a large amount of sauce. Today it will be a delicious tomato with vegetables. Rice is often added to this dish, but we will add boiled buckwheat. This grain goes perfectly with chicken and makes the products not only tasty, but also more original. Rinse the fillet under running water, cut it into large pieces so that you can grind it in a meat grinder. Peel half the onion and cut into medium slices.
Grind the chicken fillet and onion through a meat grinder, the minced meat is ready for the recipe. Salt and pepper it.
Boil the buckwheat until half cooked, drain the excess water, and let the cereal cool slightly. I cooked the porridge for about 10 minutes - that's enough. Then add the buckwheat to the minced meat and mix everything well. The workpiece is ready.
Lightly moisten your hands with water and roll into small round minced meatballs.
Heat the frying pan, pour a little oil and fry the chicken meatballs in tomato sauce in a frying pan on all sides. Fry over medium heat for 4-5 minutes. Do not move away from the stove, but constantly turn the products from one side to the other. Remove the fried pieces from the pan.
And then pour all the prepared vegetables into the frying pan - the remaining finely chopped onion and grated carrots. If there is not enough oil, add a couple of drops extra. Fry the vegetables for a couple of minutes until the onion is soft and translucent.
Dilute the tomato paste with water, pour it into the pan with the vegetables, add a little salt and sugar to taste, and pepper if desired.
Place all the fried meatballs into the hot boiling sauce. Simmer the dish covered for 15 minutes over low heat. Minced chicken meatballs cook quickly - this is a big plus of this dish.
Serve the finished minced chicken meatballs in tomato sauce to the table immediately. They turn out juicy and tender, their taste is rich and bright. You can serve this dish with additional sour cream or natural yogurt.
