Cut the peeled beets into large pieces and place in a saucepan. If you want to get a beautiful dark red color of the dish, add a teaspoon of sugar.
Pour cold purified water into a saucepan. The beets should be completely covered with liquid.
Bring the contents of the saucepan to a boil. Then we reduce the heating of the plate to a minimum and remove the resulting foam. Add chopped garlic cloves, seasonings and spices to the pan. Cook vegetables for 30-40 minutes.
After the specified time, turn off the stove and drain all the liquid into a separate bowl. With an immersion blender, grind the beets with garlic until smooth.
In small portions, return the vegetable broth to the pan. Adjust the thickness of the soup according to your own preferences.
