Initially, onion stew was the food of the poor and the soldiers of the Roman Empire. Over time, this fragrant soup began to be served on the royal table. Usually onion soup is cooked with wine, meat or vegetable broth. Today we will prepare a new version of this recipe with the addition of cabbage. Onion soup with cabbage is thick, fragrant and rich. It tastes like a cross between traditional onion soup and Russian lenten cabbage soup. The abundance of onions gives the soup a spicy sweet touch, making the dish incredibly tasty. If you want to make a lean dish, replace the chicken broth with vegetable broth.
Any bone-in chicken parts can be used for the broth. Wash the meat, put in a three-liter saucepan, put on fire. After removing the foam before boiling, boil the broth for 30 minutes, after which we remove the meat from it and, if necessary, strain.
We clean the onion, wash it under running water. Cut vegetables into cubes.
Heat a deep frying pan with vegetable oil and pour all the chopped onion into it.
Stirring occasionally, we will sauté it over low heat until a golden hue is obtained.
Peel the carrots, cut into strips or cubes. You can also chop vegetables on a grater.
Add chopped carrots to sautéed onions. Let's continue to cook the vegetables for a few more minutes so that the carrots become softer.
Transfer the browned vegetables to the prepared chicken broth.
Cut white cabbage into thin strips. It is convenient to use a vegetable shredder for chopping.
Following the onions and carrots, add cabbage to the soup. Young cabbage will cook in 5-7 minutes, the old one will need more time - about 15 minutes.
While cabbage is cooking, pour wheat flour into a dry frying pan. Stirring constantly, fry the flour until light brown.
When the vegetables in the soup are ready, add toasted flour, finely chopped dill and parsley, salt and spices. Stir, let the onion soup boil and turn off the stove.
We will serve onion soup with slices of fresh rye bread or croutons.
