Ask friends who have visited Greece what they liked about their vacation. You will definitely hear the answer: gentle sea, fresh seafood, wonderful wine, hospitality. And the most delicious salad in the world! This is a Greek salad, which in its homeland is called “horiatiki” – rustic. All salad ingredients are very simple and familiar to the Greeks. For us, he, too, has long become a favorite of the festive and everyday table!
The uniqueness of the Greek salad, first of all, in its dressing. Its base is a good olive oil, first (cold) pressed, which in itself contains a unique aromatic and flavor bouquet. Classic Greek Horiatiki is seasoned with olive oil mixed with lemon juice and dried herbs. Sometimes lemon juice is replaced with balsamic or wine vinegar. This sauce should be prepared in advance so that the oil has time to soak in the aromas of dry spices. So, mix the oil, lemon juice and oregano, beat lightly with a whisk. Wash all vegetables and dry with a towel. Cut the tomatoes in half, remove the green part near the stalk and cut in half again.
Remove the top peel completely or partially from cucumbers and cut into circles or small bars.
Now you can take a wide dish and start laying out the salad in even layers. If desired, cover the dish with lettuce leaves, put cucumbers on them first, and then tomatoes.
The next layer is sweet pepper, peeled and cut into large cubes.
Put sweet lettuce onion, cut into thin half rings, on the pepper.
Black olives are laid out on top of the salad.
Feta is cut into large cubes and laid out near the olives.
Drizzle with lemon juice, olive oil and oregano dressing. She has already insisted enough and will be able to emphasize the taste of fresh tomatoes, cucumbers and peppers. The salad is not stirred or salted before serving.
