Fragrant chicken broth with tender semolina dumplings is perfect for a children’s or diet menu. Thanks to vegetables and spices, the broth becomes spicy, with a rich taste. Cheese and greens give semolina dumplings an incredible taste and aroma, making the dish light, healthy and nutritious.
Let's make chicken broth. Wash chicken meat under running water, clean if necessary. Putting it in a saucepan, fill the chicken drumstick with 1.5 liters of cold water.
When the broth begins to boil, remove all the foam so that it remains clear. Add peeled carrots, bay leaf, parsley stalks and peppercorns to the broth. Peel the onion, leaving only the bottom layer of the husk. Wash thoroughly and add the onion to the broth to give it a rich golden color.
Let's make semolina dumplings with cheese. Grind hard cheese using a grater with a fine cloth.
Add finely chopped greens. You can use parsley, celery or dill.
Pour semolina into the mixture.
Add melted butter on the stove or in the microwave.
Mix dough for dumplings. Crack one egg into it and combine all the ingredients into a homogeneous mixture. Chill the dough in the refrigerator for 25 minutes. The cereal should swell, and the dough for dumplings should thicken.
From the finished dough, we form round dumplings of the same size.
After boiling the broth for 35 minutes, take out the chicken and vegetables from it. Strain the broth and return to the pot.
Cool the boiled meat a little and separate the poultry fillet from the bones. Add the pieces of meat to the boiling broth.
Next, dip dumplings with cheese into boiling chicken broth.
When the dumplings float, salt the dish to taste, season with spices, add chopped greens. Boil the dish for 7 minutes and turn off the heat.
