Let’s take advantage of the summer vegetable season and make a super quick and easy zucchini pizza recipe. This unusual dish is perfectly filling, gives a lot of positive energy and brings great benefits to the body. Of course, zucchini-based pizza has nothing in common with yeast dough. But it is an ideal dietary option for those who are watching their figure. Our zucchini pizza with cheese and tomatoes turns out very tasty. Let’s cook it!
Prepare the dough for the zucchini pizza recipe - three zucchini on a vegetable grater and squeeze. Excess liquid must be removed so that the dough is well baked and holds its shape. The exception is young zucchini with very dense pulp. They retain moisture well and do not require spinning.
Add finely chopped dill, flour, baking powder and eggs to the chopped zucchini. Mix everything thoroughly.
Add salt and dry spices to the resulting mass.
Grease a baking dish with a small piece of butter and sprinkle with ground breadcrumbs. Instead of crackers, you can use flour or semolina. To distribute the crackers evenly, tilt the pan in different directions and lightly tap on the sides. Pour out the excess crackers.
Transfer the dough to the prepared pan. Use a silicone spatula to level its surface.
Cut the tomatoes into slices. Place them on the zucchini dough.
Sprinkle the tomato slices with grated cheese.
Preheat the oven to 200˚C. Bake the pizza for at least 20 minutes. We determine the degree of readiness of the dish by the appearance of the cheese. It should melt well and acquire a light golden color. First cool the finished zucchini pizza in the oven and then remove it from the mold. This cannot be done while hot. Place it on a serving plate, cut it into portions and serve. If desired, you can heat it in the microwave to slightly melt the cheese.
