Zucchini is ideal for many recipes. They are baked with meat, cheese, marinated for the winter or simply fried with garlic. Today together we will prepare a delicious vegetable salad with fried zucchini. Additionally, the composition includes tomatoes, cucumbers, onions, garlic and any greens. You can use spinach, arugula, etc. The finished dish turns out bright and appetizing, its aroma increases appetite!
Wash the zucchini, cut off the tails on both sides. For the fried zucchini salad recipe, young vegetables are best, then you don’t have to peel them. So, cut the young vegetables into medium slices or quarter rings.
Lightly grease the frying pan with vegetable oil, put the zucchini in there, fry the vegetables for 4-5 minutes, salt them to taste. They will become slightly browned, soft on the outside and slightly crispy on the inside. Remove the frying pan from the heat.
While the zucchini is cooling, cut the cucumbers and tomatoes into cubes or slightly larger pieces.
Place chopped vegetables – cucumbers and tomatoes – into a salad bowl.
Peel the red onion and garlic. Cut the onion into half rings and the garlic into small pieces or simply press it through a press.
Add onion and chopped garlic to the salad – they will make the salad piquant, slightly spicy and aromatic.
Now add the fried zucchini to it.
Drizzle the salad with the remaining vegetable oil. You can use fragrant unrefined market oil. Salt and pepper to taste, mix everything.
Place the finished salad with fried zucchini and tomatoes on a bed of mixed greens. Garnish with sesame seeds! It's delicious, filling and nutritious. This dish will add variety to your daily diet.
