Vareniki are popular in many countries and are prepared with a variety of fillings. Here you can use meat, mushrooms and any vegetables, such as cabbage or potatoes. There are also a large number of fans who love vareniki with cottage cheese and herbs. Often these vareniki are a sweet treat, but today we’ll add some greens to the filling. Spicy dill, parsley or cilantro are suitable here. The dish will no longer be a dessert, but will move into the appetizer section. An unusual and original filling of cottage cheese with herbs for vareniki will add variety to your daily diet.
If you have all the ingredients, you can immediately start cooking. Knead the dough in boiling water, it will not boil or crack, the vareniki will be tender and soft. Cottage cheese for filling is suitable for any fat content. The dish is very nutritious and satisfying; it can be served with butter, sour cream or other fermented milk sauce.
Sift half of the entire portion of flour into a deep bowl, add salt and mix.
Pour in boiling water and vegetable oil, brew the flour. Mix all ingredients thoroughly. Stir with a spoon or spatula as the dough is still hot.
Then add the chicken egg and immediately combine it with the dough so that the white does not cook.
Then add the remaining wheat flour and start kneading the dough.
Roll the dough into a ball and leave it to rest for 20-25 minutes. The mass will become more elastic and soft.
Meanwhile, prepare the filling. Mix cottage cheese with finely chopped dill, add a little salt and pepper to taste. Mix the filling well and you're done.
Roll out the dough into a thin layer, squeeze out circles using a regular 200-250 g glass.
Place 1 teaspoon of curd filling in the center of the circles, no more, so that the edges of the dough are well connected.
Make the vareniki by connecting all the ends, pressing them down carefully. Roll out more dough in the same way and cook all the vareniki until the filling is gone.
Boil 1 liter of water in a saucepan, add a little salt and add vareniki. Cook them in boiling water for 3-4 minutes until they all float to the surface. If you have made a large portion of vareniki, then cook them separately, in several stages. Vareniki should be cooked in a spacious container.
