Our recipe for Turkish Achma buns begins with the preparation of the dough. It will help the dough to rise faster and gain lightness. In a deep container, using a hand whisk, mix warm water, yeast, sugar and two tablespoons of flour. The resulting liquid is left on the table for 15 minutes.
As soon as a characteristic air cap appears on the surface of the dough, add salt, egg white and vegetable oil to it. We mix everything well. Add warm milk and mix again.
Gradually add flour to the resulting mixture. Knead soft elastic dough. We place it in a container greased with vegetable oil, cover with cling film or a towel and leave it warm for 40 minutes. During this time, the dough should double in volume.
Transfer the risen dough to a work surface and divide into six equal portions. Roll each piece into a smooth ball. Cover the blanks with cling film and let them rest for 10 minutes.
Let's start making buns. Roll out the dough ball into a thin layer. We do not use additional flour.
Divide butter into six equal parts. With the back of a teaspoon, grease the rolled out dough with a piece of butter. We turn the cake into a thin roll, pulling the edges of the dough to the sides.
With your hands, lightly roll the roll on the work surface so that it becomes a little longer. Then we take it in our hands, fold it in the form of a donut and tie it into a knot. Similarly, we form the rest of the products.
Transfer the prepared buns to a parchment-lined baking sheet. Cover them with cling film and leave them on the table for 20 minutes. This is enough time for the buns to double in size.
Let's prepare the lezon. Mix the yolk with a teaspoon of milk. Lubricate the products that have come up with the resulting liquid. Let the dough dry for five minutes, grease it again with lezon and sprinkle with sesame seeds. Preheat the oven to 200˚C. We bake products for 20-25 minutes.
