To reveal familiar dishes from the other side, they are often supplemented with all kinds of sauces. We offer a recipe for a refreshing thick sauce with wild leek. Its main ingredient is tender green wild leek sprouts. Spicy garlic sauce with a certain spiciness perfectly complements pizza, pasta, bruschetta, meat, fish and many other dishes.
The undoubted plus of the recipe is the absence of heat treatment of products. This allows you to fully preserve the vitamins. It also saves cooking time.
In addition to wild leek, other herbs can be added to the sauce in small quantities. It will bring out the flavor of the sauce. A juicy cucumber will add freshness to the thick sauce with wild leek, nuts will make it nutritious, and lemon will balance the taste.
Rinse the wild leek under running water, shake off the drops or blot with a towel, cut into very small pieces.
Chop the cucumber with a metal grater with small holes. If you are using young cucumbers, there is no need to remove the top layer. After grinding, the cucumber pulp should be slightly separated from the resulting juice.
Wash the dill and parsley, tear off the leaves from the twigs, and chop the leaves finely.
Mix all prepared ingredients in one container.
Then add the indicated portion of sour cream, mix intensively so that the sour cream is completely combined with the greens. Sour cream can also be replaced with thick, unsweetened yogurt.
Crush the nut kernels into crumbs, a coffee grinder, blender or meat grinder will help you with this. Throw the nut mass into the sauce, mix.
To give the sauce the right taste, you need to flavor it with salt, pepper, and also squeeze the juice from the lemon.
Mix the sauce again, taste, add the missing spices. Then pour the mixture into a glass jar and store in the refrigerator. Serve the sauce cold.
