The classic Tatar pie is known to the world under different names: “kurnik”, “zur belish” or “echpochmak”, it’s all about the filling. Tatar zur belish with chicken – a voluminous pie stuffed with potatoes, onions and chicken fillet. This simple dish will replace a full lunch or dinner. We tell you how to cook a delicious recipe for zur belish with chicken at home!
Sift the flour, add salt and soda to it. Melt the margarine or butter, let it cool a little and pour it into the flour. We send cold kefir there.
We start kneading the dough. It turns out elastic, soft and not sticky to hands. We shift the dough into a container and cover it with cellophane. We give him a "rest" for about 40-60 minutes in the refrigerator.
Wash chicken and dry with paper towels. We remove the skin, remove excess fat and tendons. Cut the fillet into small cubes.
We wash the peeled potatoes from starch, and then finely chop. Cut the onion into small cubes, quarters or half rings.
We cut off ¼ of the entire volume from the dough. First, roll out a large piece of dough in the shape of a baking dish. We put it in a form with oiled sides and bottom. Press the dough into the mold with your fingers.
Put the chopped potatoes in the first layer. Lightly salt it and add spices to taste. Put the onion in the second layer.
The third layer is chopped chicken fillet. We distribute it evenly over the lower layers. Add some more salt and spices.
Roll out the second piece of dough into a thin layer and cover the top of the pie with it. First, pinch both layers of dough so that they are connected.
Then we twist the edge into a pigtail, forming beautiful bumpers. We make a cross-shaped hole in the center, bend the edges inward so that we get a circle. Brush the top of the pie with the beaten egg mixture. Pour 30-50 ml of water and the rest of the egg into the hole of the pie. We send it to a hot oven at 200 degrees. Bake the cake for about 45-50 minutes, controlling the degree of blush. If the dough is browning too much, cover the top with foil.
We take out the finished recipe for zur belish with chicken and potatoes from the oven and immediately grease its top with water. Let it cool without taking it out of the mold.
Transfer the cooled zur belish with chicken to a serving dish and serve. Such a cake will be a worthy decoration of the festive table. Its delicious aroma and taste will not leave anyone indifferent.
