Do you want to get acquainted with Tatar cuisine? We will give you a recipe for traditional Tatar pies. Echpochmak – Tatar triangles with meat and potatoes, which we will cook together. A few available ingredients, a couple of hours of time, and a new dish will already be on your table!
Preparing dough for Tatar triangles of pies with potatoes and meat. In a saucepan, heat the milk to 40 degrees, based on which we will prepare the dough. Add yeast and sugar to warm milk. Leave the mixture for 10-15 minutes.
Break the eggs into a bowl and beat with a whisk. Add vegetable oil and melted butter here. Mix the mass.
About 300 gr. sift flour and salt into a separate deep container. In the center we make a depression into which we pour the dough and a mixture of butter and eggs. Knead the dough, taking the flour from the edges to the center.
Pour the remaining flour onto the countertop and knead the dough on it until smooth. The finished dough comes out soft, but slightly sticky to your hands. Transfer it back to the bowl, cover with film and let rise in a warm place for about 1 hour.
For the filling, cut the potatoes and onions into small cubes.
We cut off the veins and skin from the chicken fillet, and then also chop it.
Add softened butter, salt and pepper to the filling. Mix the mass.
Punch down the risen dough and then transfer it to a floured work surface. We divide it into 6 parts. Roll the pieces into flat cakes. Place 2 tsp on each. fillings.
We form a pie in the shape of a triangle. To do this, first connect the left edge, then the top and right.
Transfer the triangles to a greased baking sheet or baking paper.
Place the pies in the oven for 30-40 minutes at 180 degrees. Adjust the baking time based on the power of your oven. A bright blush indicates the readiness of the triangles. Grease the hot pies with a piece of butter.
