Making Tamago-yaki with carrots and green onions at home is easy. If you follow the special technology of baking and folding a thin omelette into a tight tube. We apply the skills of Japanese cooking art. It turns out a tender and juicy roll from the most common products. Let’s cook a delicious recipe – Japanese Tamago omelette at home!
Our egg roll with carrots, therefore, first of all, we will prepare the vegetables. We cut the carrot into a cube with a side of no more than 3 mm, chop the onion into thin rings. In this state, the vegetables will have time to cook and will look harmonious in the context.
Then break the eggs into a small bowl. Add salt and pepper.
Using a fork, beat the eggs until they turn into a fluid mixture. The liquid should resemble water. So it will easily pass through the sieve and acquire the necessary uniformity. We do not use a whisk! It can give a large number of bubbles, and they will be superfluous in this dish.
The resulting egg base is filtered through a sieve. This step must be followed. It requires cooking technology. Add chopped onions and carrots. We mix.
We bake an egg pancake. Pour half the amount of vegetable oil into the pan. Using a silicone brush, spread it along the bottom. We put the pan on a slow fire and warm it up. Once the bottom is warm, pour in half of the egg mixture.
We bake a pancake only in a warm pan! It is important! When baked in a hot pan, it will lose elasticity and will break when rolled up! As soon as the bottom of the pancake grabs, and the top is slightly raw, lift its edge and begin to roll.
Carefully move the not completely twisted roll to the center of the pan. Lubricate the vacated place with vegetable oil. Pour in half of the remaining egg mixture. A small part of it should fall under the finished pancake so that the two parts of the product are connected to each other. We continue to bake the Japanese omelette roll in a warm pan.
As soon as the second portion of the roll is ready, we roll up its next layer. Again, move the product to the center of the pan. Lubricate the vacated place with vegetable oil. Pour in the remaining egg mixture and bring it to a boil. We make sure that its small part again falls under the finished pancake. Roll up the last layer of the roll.
We move the product to the middle of the pan and increase the heating of the stove. Bake the roll on both sides until a light golden color.
Transfer the finished dish to a cutting board and cool slightly.
Cut the Tamago-yaki roll into portions and serve. As an addition, we use soy sauce, wasabi or pickled ginger.
