Albondigas Spanish Meatballs with Tomato Sauce is a popular snack served in all local bars. You can cook delicious meat balls from any minced meat. Fresh or canned tomatoes are used as the basis for the sauce. A spicy seasoning for meat gives a spicy hotness to the dish. It is easily replaced with a small amount of fresh or dried chili peppers.
Pour crackers with cold water, finely chop the parsley.
Grind half the norm of onion and a clove of garlic. Add breadcrumbs, parsley, onion, garlic and yolk to minced meat. We mix.
Add spices and salt. Mix everything again.
We form meatballs. With wet hands, roll into walnut-sized balls. We lay out the resulting products on a cutting board.
Sprinkle the formed balls with a little flour.
We heat up half the norm of vegetable oil. Place the meatballs in the pan with the sprinkled side down. Then we turn over the products. Fry them on both sides until golden brown. In the process of cooking, turn the products over several times. Transfer the meatballs to a dish to remove excess fat.
We're preparing the sauce. Fry the second part of the finely chopped onion in the remaining vegetable oil until light golden brown.
Add diced tomatoes. Bring the contents of the pan to a boil and simmer over low heat for eight minutes.
Add salt and spices to tomatoes. Boil the sauce for another two minutes. We put meatballs in it. Gently mix them into the sauce. Simmer the dish for 20 minutes until the liquid has completely evaporated. At the end of cooking, the sauce will soak the meatballs well and cover them on all sides.
To serve, put Albondigas Spanish meatballs on a plate, pour over the sauce and sprinkle with chopped parsley.
