Even a very capricious baby will eat this fragrant bright orange soup with appetite. The combination of juicy meatballs with vegetables will surely appeal to the household. Boiled from domestic duck, the soup with beef meatballs is incredibly fragrant and very satisfying.
Prepare duck broth. Of course, poultry broth is especially fragrant and tasty. In the absence of a duck, you can use chicken. Use a slotted spoon to remove foam from the broth as needed. When the broth boils, add allspice and lavrushka to it for flavor (at the end of cooking, lavrushka leaves should be removed).
While the broth is cooking, prepare the vegetables.
Peel the potatoes, cut into equal cubes. So that it does not change color until it is time to lower it into the broth, you should pour the potatoes with cool water.
Cut the onion into cubes, grate the carrots. Pour three tablespoons of oil into a dry frying pan. When the pan is hot enough, add the chopped vegetables to it. Simmer vegetables while stirring for five minutes.
For the meatballs, mix the veal mince with a pinch of salt and ground pepper. Form minced meat into small meatballs of the same size, and dip them one at a time into the broth. Add potatoes (don't forget to drain all the water first). After ten minutes, transfer the fried vegetables to a pot with soup. Then add seasonings, parsley and salt to the soup.
After three minutes, the soup with meatballs can already be poured into plates. Serve with garlic donuts or croutons.
