Solyanka with sausage and pork ribs is a thick and rich vegetable soup with the addition of a large amount of meat, smoked meats and sausages. Solyanka has a bright rich taste and incredible aroma. Therefore, this dish is popular in every family. For its preparation, you can use smoked or boiled sausage, ham, sausages. Or smoked ribs, brisket, carbonate, pork, beef on the bone.
Wash the smoked ribs, cut and put in a saucepan with two liters of water. Cover with a lid, put the dishes on a slow fire. We will cook the ribs for 30 minutes after boiling. During cooking, we will periodically remove the foam so that the broth remains transparent.
Wash the potatoes, peel the skin. Cut the tubers into cubes.
When the ribs are cooked, add chopped potato tubers to them.
Finely chop the onion, grate the carrots for the hodgepodge.
Pour vegetables into a pan with sunflower oil. Fry the ingredients until soft.
Salted cucumbers cut into strips. If the peel of vegetables is rough, then it is better to pre-peel it with a knife.
Add pickled cucumbers to a pan with browned vegetables. Let's continue cooking them together for a few minutes.
Add tomato paste to vegetables. Mix the ingredients with a spatula, after a minute turn off the heat.
When the potatoes are cooked, add the vegetables fried with tomato paste.
We cut the sausage and ham into strips, and the hunting sausages into rings.
Add sausages to the hodgepodge after the vegetables.
Boil the hodgepodge for 5-7 minutes. Then add chopped parsley and dill, chopped olives, salt and spices to it. Stir the soup, bring it to taste, adding more salt, paprika or ground pepper if necessary. Let the hodgepodge boil again and turn off the fire.
We will serve a hodgepodge, supplementing each serving with herbs and a slice of lemon for piquancy.
