Prepare the dough for yeast pies with apple jam - dissolve sugar in slightly warmed milk. Add instant yeast to the bowl and stir the milk. Let the yeast sit in a warm place for literally 10 minutes.
Sift flour and salt into a deep container. We make a hole in the center and pour milk with yeast and vegetable oil into it.
Knead the dough with a spoon, collecting flour from the edge to the center. Use your hands to form the dough into a ball and place it in a bowl with oiled sides. Cover with film and leave for 1 hour.
Divide the risen dough into lumps of equal weight, you should get about 10. The dough quickly chaffs in the air, so keep it covered with film. Roll out the ball to 3 mm and cut out a circle with a glass. Place 1-2 spoons of jam on the center. We fasten the edges, forming a triangular pie.
Leave the pies on the baking sheet for 15-20 minutes to rest. At this time, preheat the oven to 200 degrees. Before sending the pies to bake, brush them with a mixture of 2 yolks and a spoonful of milk.
