Pancakes with banana filling are an ideal solution for breakfast or lunch; the whole family will be delighted, especially children. Frying delicious homemade pancakes is not that difficult. The main thing is to have a proven recipe on hand and complement the baked goods with an appetizing filling. Bananas are perfect for this. They are flavorful and nutritious. Prepare the simplest and most affordable dough – in water with milk and eggs. If you have some milk left, adding just water will make the perfect pancake batter. The pancakes with banana filling will turn out thin and will not tear. It is better to serve the dessert with filling immediately after cooking, adding tea or coffee to the pancakes.
Break the chicken eggs into a bowl and add 40 grams there. sugar and 1 pinch of salt. The pancakes will be moderately sweet, the rest will be added by the filling. Using a hand whisk, whisk the entire mixture until smooth, allowing the sugar to dissolve and melt.
Pour milk and half a portion of water into the dough. Pre-sieve all the wheat flour and pour into the dough in parts, stirring slowly, slowly all the lumps. A whisk does a great job of this, you don't even need a mixer.
At the end, pour in the remaining water and a little vegetable oil. Stir the mixture and add lemon juice if you like, the pancakes will have a citrus aroma. The dough is ready, all you have to do is wait and let it rest. This procedure is mandatory so that the gluten is released in the dough and the pancakes do not tear when turned over.
Grease the frying pan with vegetable oil, heat the surface well by turning on medium heat. Pour in 0.5 ladles of pancake batter, tilting the pan so that the liquid covers the entire surface. Start making pancakes. One side is fried for 20-25 seconds so that the edges are well fried on the other side.
Then turn the pancake over with a spatula and fry on the other side, but not for so long - 15-18 seconds will be enough.
In this way, fry all the ruddy thin pancakes, stacking them.
And now prepare the filling. Peel the bananas, cut them into pieces and place in a bowl. Add all the remaining sugar there to add flavor.
Mash the bananas into a puree, mixing with sugar. Use ripe and soft bananas for this recipe.
